  • 1 x 2.2kg chicken, jointed into 8 pieces
  • 60ml garlic oil
  • 60ml white wine
  • 1 red onion, peeled and thinly sliced
  • salt to taste
  • 30g Jarlsberg cheese, grated
  • 30g mature Cheddar cheese, grated

Method Steps

  1. Preheat the oven to 180ºC/gas 4
  2. Rinse the chicken and dry with kitchen paper, then brush with the garlic oil.
  3. Place in a baking dish and sprinkle over the wine.
  4. Cover with the onions, add salt and bake, covered, for 30 minutes.
  5. Uncover the pot, sprinkle with the cheeses and bake uncovered until the chicken, onions and cheeses are crisp, about 45 minutes.
